There is no ‘best’ basmati rice. There is so much variation that if one suggests a brand, the packet that you buy of the same brand might be unimpressive! The alternative is impractical- buying 50kg or 100kg bags.

What you can do is:

• Buy any brand that seems VFM for you. A few brands like India Gate, Daawat, etc. have multiple varieties. Avoid ‘Rozana’, ‘Dubar’, ‘Tibar’ etc. - far from being ‘distinguished’, they are actually low quality daily use varieties
• Clean the rice with water at least 3 times. Soak for 30min at least
• Use a vessel that will hold 3–4x water as per quantity of rice. The large vessel volume and excess water will allow it to grow to maximum size possible
• Let the water come to a boil with the whole spices and salt. Add the rice, and allow it to boil till it is half cooked (parboiled). Filter out the rice from the water immediately - do reserve a cup or two for sprinkling after assembling the biryani
