How many keywords are good to target for a site?

3 to 4 keywords is just right.. But it depends on yo actually but if your going to rank all those keywords then you'll have to do a lot of hard work..

In my experience, the most important thing is to have key words in the title, meta tags (less important but still) and content density all work in synch, you have to be consistent throughout you page. Not too many key words, not too few. What I find useful is to have key words of all ranges, easy ones, moderately common and more difficult. When I search on line personally I always search key words in pairs of two. Therefore I find it useful to target 2 key words; one is easy, the other one moderately difficult and when the two are searched at the same time, I should rank well. That's what I target.

There's no general guideline when it comes to keyword density. How many is going to depend on what you write and how popular the theme of your page is .If you have a 500 words article ,there are a substantial number of 2,3,4,5 word etc.combinations that your page can theoretically target.

Generally, you should focus on 3 or 4 keywords you want to make your main focus. Its easier said than done, since the most popular keywords are usually very difficult to rank high on.
