Definately go to the Troodos Mountains, amazing views! Try and go on a traditional Cypriot night, either on a cruise or in a Taverner in the hills, away from the touristy areas. Some tour operators do these as a package. Paphos harbour is great and there are some amazing restaurants along there, especially if you like seafood.
