What do you think are the 3 most important features in a web hosting service?

Mine are:

1- Bandwidth
2- Disk Space
3- Unlimited domains/subdomains

I completely agree that bandwidth, space and unlimited domains and subdomains are really important considerations.

Other things I look for are:

1)Uptime - Especially if you're running PPC campaigns!

2)Reputation / Quality of Customer Service or Support - I usually do a search on "[hosting provider name] review" and "[hosting provider name] scam" to see if anything negative about the company turns up. I also use the search function in hosting forums to see what people are saying about the company.

3)Control Panel - I found out the hard way that most of the scripts out there were designed for cPanel and may be incompatible with other control panels.

4)Price - Only for higher-priced packages such as VPS / Dedicated servers. I try not to waste too much time trying to save a few bucks a year on shared hosting by doing too much research on who's the cheapest.

5)Money-Back Guarantee - If it's a host I've never used before.

I'm sure there are important technical specs that I should consider too but unfortunately I'm not technical enough to know what to look for...

I would agree on that, there are a lot of people who wouldn't go with a host just because they don't have cPanel.
